Special breakfast treat!

We realize that not everyone has the time to visit us here at AWAY in beautiful Prince Edward County. We  book up pretty quick and unfortunately have to turn many away.  We do have a wait list and sometimes there are the odd cancellation.

However in the meantime as a special treat we are sharing with you a one of our guest’s favourite breakfasts.

So although you may not be able to visit (currently) you can enjoy one of our breakfasts.  The only thing missing is our wonderful view!

P.S.  This recipe is great becuase you prepare it the night before and then pop it in the oven in the morning!

Hint:  Tastes especially good on a tray served in bed.

Waupoos Blueberry & Raspberry Bread Pudding

7 1/4 ounces Challa bread (egg bread), cubed (about 6 cups)
3 cups fresh blueberries (we use Waupoos blueberries from Prince Edward County) and 3 cups fresh raspberries.
7 1/4 ounces cream cheese, softened
5/8 cup sour cream
1/2 cup brown sugar, firmly packed
1/2 cup milk
1/3 cup maple syrup
6 eggs, beaten
5/8 teaspoon ground cinnamon
5/8 teaspoon vanilla extract

If you want a lighter version use reduced fat sour cream, cream cheese and milk.

Makes 6 servings.

Directions:

Coat 9×13-inch glass baking dish with cooking spray; place bread cubes inside. Sprinkle half of the blueberries and raspberries on top.

In a large bowl, beat cream cheese until smooth. Add sour cream, brown sugar, milk, and maple syrup. Continue beating until smooth. Add eggs, cinnamon, and vanilla extract. Continue beating until mixture is blended.

Pour cream cheese-egg mixture over the bread and berries. Cover with foil and refrigerate overnight.

Remove from refrigerator about 30 minutes prior to baking. Bake, with foil on, in a preheated 350 degree F oven for 30 minutes.

Remove foil and continue baking until there are no signs of visible liquid egg, about 20-25 minutes longer.

Sprinkle remaining blueberries on top and serve with maple syrup if desired. Refrigerate leftovers.
